Phantasm Becomes Reality

The new collaboration beer from Cincinnati’s Fifty West Brewing and Third Eye Brewing in Sharonville is harnessing the power of an innovative new ingredient to deliver huge, complex flavors. Eye on the Road is a hazy double IPA brewed with Phantasm, a powder extract made from the skins of New Zealand-grown Marlborough Sauvignon Blanc grape skins, which are naturally high in thiol precursors. When processed by specific strains of yeast in fermentation, those precursors are biotransformed into aromatic thiol compounds.

What that chemistry lesson up there means for craft beer fans is an IPA absolutely bursting with tropical fruit aromas and flavors, beyond what had previously been thought possible. Eye on the Road pairs fruit-forward Galaxy, Nelson Sauvin and Citra hops with the Phantasm powder and Cosmic Punch yeast strain that amplifies those naturally occurring hop-derived aromas.

Eye on the Road will be available this Saturday, March 26 at Fifty West Brewing starting at 11 a.m., though the brewery will start allowing guests to line up for the release at 8 a.m. If you need extra incentive to queue up Saturday morning, Fifty West will also release a barrel aged version of their 10 & 2 barleywine, which has won two medals at the World Beer Cup competition and one at the Great American Beer Festival.
